Engine:
300V Chrono 10W-40
300V Power 5W-40
Handbook says 4.5L, but you'll normally need just 4L. Manual actually recommends a 10W-30, but avoid that if you track your car. If it's just occasional hard driving 10W-30 or any of the above oils are fine. Avoid crazy viscosities like 10W-60.
Transmission:
Gear 300
Approx 2.3L
Though the Gear 300 CAN be used in the centre and rear differentials, I wouldn't recommend it. Try and use application specific oils and avoid general purpose GL4/GL5 types.
Centre and Rear Differential:
0.4L Centre / 0.7L Rear.
You can use Motul Gear Comp (FF). Is GL5 rated and has the proper LSD modifiers for use in the differentials.
Alternately, try using RedLine Lightweight or Heavyweight Shockproof for your Centre Differential, together with RedLine 75W-90 GL5 for the Rear. These are more focused oils, and are also ester-based just like Motul.
AYC:
0.8L
Stick to ATF SPIII for the AYC clutch bath. ATF SPIII is not the same as Dexron Mercon so I don't recommend anything that doesn't match it. Besides, you have to drain your AYC oil at every service so you don't need killer quality oil. For the AYC hydraulics, ATF SPIII will do just fine.
Motul engine oils are some of the best you can buy. Very expensive but also very impressive. The Power Racing 5W-30 was the one oil I ever used that made the car feel clearly more powerful. That said, Motul oils are very performance oriented; if you want something that'll give you more protection but not the same level of performance, try Royal Purple engine oils.
Also don't forget to flush/drain your radiator and to add a bottle of Redline Water Wetter in there just for peace of mind.
You can also use Motul's RBF600 for your brake and clutch lines, but it is very expensive and doesn't last longer than 6 months or so before losing efficiency.
