Any brake rotor supplier would advise to bed in new pads and/or rotors.If rotor uneven wear before installation of calipers,then you need to skim.If skimming do it 'on wheel '.
Jerking is attributed to uneven hotspots on the rotor( that is what most manufacturers say anyway)!!
It takes a lot of abuse before a rotor truly warps.
Always best to match pads to rotor ie same manufacturer.
